EGG COFFEE, A UNIQUE BREW IN BAGUIO CITY

Eggs are a staple in Filipino meals, often served fried or boiled.

But what happens when eggs are mixed with coffee?

A café in Baguio City is offering this unique beverage that has intrigued both locals and tourists.

At the opening of the Montañosa Film Festival 2025 in March, one of the highlights was “SineMusiKain,” which featured various food stalls and drink options.

Among the most talked-about offerings was egg coffee, which caught the attention of festival-goers Roellyn Lozano and Merick Filosofo.

“We saw the stall while walking and thought we should try it because egg coffee seemed unusual. It tasted just like regular coffee at first, but after a while, you could sense the egg flavor,” Lozano shared.

Filosofo described it as similar to leche flan but with a strong and pungent coffee aftertaste, making it a distinct brew.

Egg coffee is made by whisking fresh egg yolks with condensed milk until it becomes smooth and creamy.

The mixture is then poured over hot or cold brewed coffee, creating a rich and velvety drink with a balanced sweetness.

The couple behind this innovative drink, Eric and Angeline, started with a small pop-up kiosk in a residential area.

At first, they struggled to attract customers since the idea of egg coffee was unfamiliar to many.

“It was difficult to sustain the business because we had very little exposure. Tourists were the only ones curious enough to try it,” said Kimjamie Antoinette Lopez, one of the café’s owners.

Many customers also questioned whether egg coffee had a strong eggy taste or if it was safe from salmonella contamination.

“People ask if it tastes fishy, but the mix of egg and condensed milk balances the coffee’s bitterness and acidity. It’s not fishy at all,” explained Eric Regardio, one of the owners. “We also ensure that all eggs used are fresh and never serve cracked eggs to avoid contamination.”

Despite initial skepticism, the drink has started gaining popularity among both locals and visitors.

From a simple blend of coffee and egg, the café owners have brewed a unique success story.
